Potato Latke Recipe

Makes 10-12 latkes

3 peeled Idaho potatoes – roughly diced

2 ounces yellow onion- diced

¼ tsp baking powder

1 egg- beaten

¼ cup flour- sprinkle as needed

1 tsp salt

¼ turn of pepper

Ice cream scoop or spoon- 1.6- 1.75 ounces per

Oil in pan- medium -medium high heat

1. Pre-measure all ingredients, because once the potatoes get cut in the food processor they will begin to oxidize

2. Place potato and onion in food processor and blend until very finely minced. Place in separate bowl

3. Squeeze water out of potatoes and discard the water

4. Add beaten egg to potato mixture and combine well

5. Mix salt, pepper and baking powder into potato mix

6. Add flour a little at a time. This will vary slightly, depending on how well you squeezed out the water

7. Using a scoop or spoon, place mixture into frying pan on medium-medium high heat. Tap the mixture to flatten the latkes

8. Fry for about 2 minutes aside. They should be golden brown on both sides.

9. Serve with apple sauce and sour cream
