KARE in the Kitchen: Meal prep tips with JR Reis

MINNEAPOLIS -- Alicia Lewis and Sven Sundgaard went on location for the latest edition of KARE in the Kitchen, hanging out with fitness professional JR Reis.

Reis works with Life Time Fitness. He's making three bowls and shows us how to portion them out for a five day work week.

Beef Taco Bowl, Beef and Seared Veggies Bowl and Tilapia with Mango Salsa Bowl.

BEEF RICE BOWL

1.5 lbs. Ground Beef

1/4 cup Onion

Dash of salt and pepper

Optional: If making taco bowls, sprinkle small amount of taco seasoning on top of cooked beef after portioned into meal prep containers.

TILAPIA RICE BOWL

2 tilapia filets

Salt and pepper both sides

Pan fry on medium heat for 4 minutes each side.

MANGO SALSA

3 yellow mangos

1/2 red bell pepper

1/2 yellow bell pepper

1/2 orange pepper

1/2 red fresno pepper

1/2 jalepeno

1 Lime

1 Lemon

Chop all contents into small cubes

Serve cold

PAN SEARED VEGGIES

1/2 red bell pepper

1/2 yellow bell pepper

1/2 orange pepper

1/2 red fresno pepper

1/2 jalepeno

1 tbs. of balsamic vinegar

Slice all contents

Pan fry in coconut oil

Optional: Add dash of salt and pepper and for spice add red pepper flakes

THE RICE

2 Options:

Buy pre-cooked rice packets (365 brand preferred) Do not cook when portioning out rice for meal prep, 1/2 cup of rice for each serving

OR

Cook 1/2 cup quinoa per container

Boil water, add quinoa, turn off heat, cover for 5 minutes.
