Amped Up: Locally Grown Salads

Revol Greens and Salad Girl partner to promote clean, green healthy eating.

GOLDEN VALLEY, Minn. - Revol Greens, a new greenhouse farm that supplies locally grown lettuce and greens to Twin Cities’ grocers 365 days a year, and Salad Girl, a Minnesota company that offers a line of fresh, organic salad dressings, have teamed up to share a week’s worth of salads to help consumers “get their green on.”

“We all know about the nutritional benefits that greens and salads provide, but eating ‘green’ also refers to foods that are locally and sustainably produced, pesticide free and made or grown without the use of GMOs,” said Jay Johnson, president of Revol Greens, which recently began rolling out its fresh, premium lettuce that is naturally grown in a greenhouse without the use of pesticides or herbicides. “We are proud to partner with Salad Girl, another local brand, to give consumers inspiration to eat healthier and buy local produce and ingredients which are fresher, tastier and better for the environment.”

Johnson was joined on KARE Saturday by Pam Powell, founder of Salad Girl, to share one of several tasty, seasonal “green” salads they are rolling out in the coming weeks on RevolGreens.com and SaladGirl.com.

Minnesota Grown Waldorf Salad

Serves 6-8

4.5 oz. Minnesota Grown Revol Greens Romaine Crunch

3 large Minnesota Honey Crisp Apples cut in bite-sized ½ inch triangles

1 cup fresh fennel bulb chopped fine

6-8 sprigs fennel greens for garnish

1 ½ cup grated Shepherds Way Big Woods Blue Cheese

1 cup red onion chopped fine

1 ½ cups crumbled walnuts

1 bottle Salad Girl Apple Maple Organic Salad Dressing

Crafting Salad: Arrange Minnesota Grown Revol Greens Romaine Crunch upon a pretty platter or divide and compose greens on salad plates. Decorate with cooled apples, fennel, cheese, onions, walnuts and garnish with fennel greens. Just before serving, drizzle with Salad Girl’s Apple Maple Organic Salad Dressing. Enjoy!
