MINNEAPOLIS-- The 16th annual North Star Bicycle Festival is taking place June 11-15. The festival features the North Star Grand Prix Pro Stage Bike Race next week, with the Saint Paul Riverfront Time Trial and Downtown Criterium on Wednesday, the Cannon Falls Road Race on Thursday, the Uptown Minneapolis Criterium Friday evening, the Menomonie Road Race Saturday afternoon and the Stillwater Criterium Sunday beginning at 11:30 a.m.

Kakookies Collegiate All Stars Quinoa Cups
Quick to prepare using left overs for a grab-n-go nutritious breakfast, snack, or side dish to any meal. Recipe submitted by Sue Kakuk
3 eggs, beaten
2 cups cooked quinoa*
2 cups chopped veggies (such as spinach, kale, asparagus, mushrooms, onions, peppers.) Use your leftovers!
¼ cup chopped cooked bacon, sausage, ham**
salt, pepper, or other herbs
1-2 cups shredded cheese, divided
Preheat oven to 350 degrees. Spray 12 muffin cups.
In large bowl, beat eggs. Gently stir in cooked quinoa, veggies, meat**, seasonings and shredded cheese, reserving about ¼ cup cheese for top. Divide quinoa evenly among prepared muffin cups; top with reserved cheese. Bake for 20 min or until cups have puffed up and cheese is brown. Let cool 5 min and remove. Serve warm or cool completely. Wrap into individual servings, refrigerate or freeze for later use.
Popular Variations: Spinach, mushroom, bacon & parmesan; Broccoli and cheddar; Asparagus, ham & swiss; Sausage, peppers, corn & pepper jack cheese. Use any combination of leftovers!
* Quinoa (keen-wa) is an ancient grain high in protein and nutrients.
