GOLDEN VALLEY, Minn. -- The fall apple harvest is upon us and chef, cookbook author and food enthusiast Beth Dooley has some tasty ways to enjoy them. 

Fresh Apple Salsa

Fresh Apple Salsa

Makes about 3 cups

1-1/2 pounds Honey Crisp or Harrison apples, peeled, halved, cored and diced

1/2 cup minced green onions

2 tablespoons minced, seeded jalapeño chiles

1/3 cup fresh lime juice

2 tablespoons honey or agave syrup

1/4 cup chopped cilantro

Salt and freshly ground black pepper to taste.

In a medium bowl, toss all the ingredients together. This may be made up to 6 hours ahead.
