Breaking Bread Café is opened daily for breakfast and lunch. Its food celebrates the heritage of the African American community.
Breaking Bread Café is owned and operated by Appetite For Change, a nonprofit organization that uses food as a tool for building health, wealth and social change. One of the ways the eatery is giving back to the community is by employing and training people from the community. Any profits Breaking Bread Café makes goes back into supporting Appetite For Change.
Executive Chef Lachelle Cunningham stopped by KARE 11 News at 4 to share her recipe for scented rice.
2 Tbsp clarified butter or butter/oil blend
3 garlic cloves, minced
1 dried ancho pepper
2 cups white rice
4 cups vegetable stock (or water)
In a medium sauce pot over medium low heat, toast garlic and ancho pepper in butter/oil until garlic is light brown and fragrant. Add rice and toast for 1-2 minutes. Add vegetable stock and bring to a boil. Reduce heat to simmer, cover pot and cook 15 minutes, until water is evaporated and rice blooms.
