Dining Out For Life: Fish taco recipe

MINNEAPOLIS - The annual dining fundraising event raising money for AIDS service organizations - "Dining Out for Life" - is being held Thursday (April 24) at 240 participating restaurants across the state.

This year marks the 20th anniversary for Minneapolis/St. Paul/Greater MN participation with over 240 restaurants agreeing to donate a portion of dining proceeds to The Aliveness Project - a local non-profit organization and community center providing on-site meals, food shelf options, integrative therapies and vital services for individuals living with HIV/AIDS throughout Minnesota.

Highland Grill

Fish Tacos for 4

1 ½ lbs Tilapia, diced into ¾ inch cubes
2 tablespoons Cajun spice
12 each Tortillas, flour or corn
1 cup Black bean salsa- homemade or store-bought
1 cup Guacamole or fresh avocado slices
½ cup Pico de gallo- homemade or store-bought
1 cup Shredded lettuce
1 each Lime, cut into wedges
-Warm tortillas either in the oven or on the stove-top.
-In a bowl, toss diced fish with Cajun spice to coat
-Heat a tablespoon or two of oil in a sauté pan. When hot, add fish to the pan.
-Let the fish cook on the first side for a minute or two before you toss it in the pan, it should release from the surface easily once it's gotten a good sear.
-When tortillas are warm, lay them out flat on the counter.
-Down the middle of each tortilla, evenly distribute guacamole and black bean salsa, then top with cooked fish, then shredded lettuce and pico de gallo.
-Finish each taco with a squeeze of lime.
