GOLDEN VALLEY, Minn. – Meat may be the traditional item to throw on your grill, but there is a variety of delicious fresh produce that can be cooked on it as well.
Jackie Overom, Master Gardener at Pahl's Market, stopped by KARE Saturday to share a recipe for Grilled Veggie Skewers.
Grilled Veggie Skewers recipe
2 zucchinis, cut into 1 inch cubes
2 yellow squash, cut into 1 inch slices
1 cup red, yellow or green pepper chunks
1 cup red onion chunks
1 cup cherry tomatoes
Wooden skewers, soaked in water for 10-20 minutes
1. Preheat grill for medium heat and lightly oil the grate. Alternately thread vegetables on the skewers
2. Whisk olive oil, basil, oregano and black pepper in a bowl, brush mixture over vegetables
3. Cook skewers on grill until vegetables are tender, turning occasionally, 8-10 minutes
