A great introductory plant for those looking to dip their toe into vegetable gardening is Zucchini. Zucchini is a great vegetable for beginner gardeners. It is easy to grow and produces a good harvest which means even the most inexperienced gardener will get lots of zucchini to experiment in the kitchen with!
How to tell if it is ripe in your garden? When you begin to see zucchini growing from your plant, wait for it to get around 6 inches long and about 2 inches in diameter and should feel firm and be fully green. Then you know it is ripe and ready to harvest.
Zucchini Lemon Cookies
- 2 cups 365 all-purpose flour, scooped and leveled
- 1 teaspoon 365 baking powder
- 1/2 teaspoon kosher salt
- 12 tablespoons Organic Valley unsalted butter at room temperature
- 3/4 cup 365 sugar1 Larry Schultz egg
- 1/2 teaspoon 365 vanilla extract
- Zest and juice of one lemon
- 1 medium zucchini, preferably local, grated to produce 1 cup shredded zucchini
Directions: Preheat the oven to 375 degrees. Combine the flour, baking powder and salt. Set aside. Using a hand mixer, cream together the butter and sugar until fluffy and light. Add the vanilla, egg, lemon juice and zest and beat until well incorporated. Beat in the dry goods and zucchini until smooth. Drop the dough by the rounded spoonful onto a parchment lined cookie sheet. Bake until golden brown at the edges, 13-15 minutes. Yield: Between 2 and 2 1/2 dozen small cookies.
