| Sesame Crusted Salmon with Spicy Plum Sauce |
| Ingredients: ˝ cup sesame seeds 6 5-6 ounce salmon filets Vegetable oil 2 pounds broccolini (broccoli rabe) 1 tablespoon minced garlic 8 ounces plum sauce 4 ounces Thai chili sauce 1 teaspoon sesame oil 2 tablespoons rice vinegar 1/4 cup chopped cilantro Kosher salt and black pepper |
Preparation: 1. Bring a large pot of heavily salted water up to a boil, and set a large bowl of ice water next to it. 2. One boiling, place the broccolini in the water and cook for about 3 minutes, or until the broccolini is ?crisp-tender?. 3. Immediatley plunge the broccolini in the ice water. Once cooled, reserve broccolini to a plate lined with paper towels. Set aside. 4. Spread the sesame seeds out on a large plate. 5. Season the salmon with salt and pepper , and press one side of each salmon filet into the sesame seeds. Set aside. 6. In a medium work bowl, thoroughly whisk together the plum sauce, chili sauce, sesame oil, rice vinegar and cilantro. Set aside. 7. Heat a large sauté pan over high heat, and adjust enough oil to coat the bottom of the pan. 8. Carefully add the salmon filets, sesame side down, and cook until the sesame seeds are golden brown, about 3-4 minutes. 9. Turn the salmon over and cook to desired temperature (medium is best, another 2-6 minutes depending on the thickness of the filet). 10. Rest cooked salmon on a clean plate. 11. Add the garlic to the pan, and cook until garlic is just beginning to brown, about 1 minute. 12. Add the broccolini and cook until heated through, about 4-5 minutes. 13. Divide the warm broccolini among 6 plates, and top with salmon. Drizzle about 2 ounce of sauce around the plate. Serves 6 Longfellow Grill 2/28/2006 11:37:05 AM |
