Select an orange with a thick peel. Cut in half. Slide fingers between flesh and peel. Slide back and forth to detach from flesh, leaving an "orange cup". A spoon may also help in separating fruit. Next, mix muffin mix ingredients in plastic bag by squeezing bag instead of using a spoon. Fill orange 2/3rds full of batter. Place orange on aluminum foil, and pull over the cup and twist at top to leave from for muffin to rise. Place on hot coals for about 10 minutes. Chef: Dian Thomas 6/20/2001
