Ingredients: 2T olive oil 1T chopped garlic 1 tsp red pepper 1 tsp Cajun spices (like Paul Prudhomme Cajun spice) 1/2 tsp salt 1/2 tsp pepper 4 oz cooked chicken breast (grilled or baked) 4 oz andouille sausage 1/2 lb cooked pasta ( suggests casareccia or strozzapreti ) 2 - 3 oz shredded parmesan cheese
Preparation:
prepare in minutes just before serving
Note: Cook pasta ahead and set aside 1. heat oil & garlic in large fry pan on stove top 2. add bite-size pieces of cooked chicken and sausage and sear - about 30 seconds 3. add spices and stir - about 30 more seconds 4. add cooked pasta and stir into mixture until hot - about 1 or 2 minutes 5. remove from heat and divide into two portions on 2 dinner plates 5. garnish each portion with shredded parmesan cheese & serve Chef: Mark Montague, J.D.
