Greek Tiropites (Spinach Triangles)



Ingredients:
2 (10 ounce) packages spinach, thawed and squeezed dry
1 lb. phyllo dough
1 lb. butter (melted)
2 lb. feta
1 cup ricotta cheese
4 eggs
dash salt
dash pepper
dash cinnamon (optional)


Preparation:

Mix all ingredients except phyllo and butter.
Butter phyllo dough on one side. Add ingredients into center of 2 inch strip of phyllo. Fold in half and then fold into triangles. Heat for 350 degrees until golden.
