Ingredients: 2 avocados/diced 1 roma tomato/diced 1 tbl cilantro/chopped 1 tbl garlic/minced 1 tbl lime juice pinch of salt & pepper 16 medium shrimp 1 slice lemon 1 bunch Lola Rosa lettuce 1 tbl red chili oil
Preparation:
Gently toss all the ingrediants together. Add salt and pepper to taste.
Rinse and peel the shrimp, leaving in tact the end shell and tail. "De-vain" the shrimp. Add lemon slice to boiling water. Cover and steam until done.
To assemble, evenly portion the avocado mixture between Martini glasses. Place shrimp on top. Garnish with a drizzle of chili oil and a couple of Lola Rosa lettuce leaves. Chef: Mike Sneen/D'Amico & Sons 12/21/1999 2:07:27 PM
