GOLDEN VALLEY, Minn. - While seafood is great anytime, we tend to give it a bit more attention during Lent. That said, we all have a tendency to fall back on the same two to three recipes.
Seafood sustainability expert of Almanac Fish joined KARE 11 News at 4 to offer some suggestions on how we can liven things up and explore some new varieties of fish that will please you, your family and the environment.

Pan-Fried Driftless Trout Fillets
Ingredients
• Four 7-9 ounce trout fillets
• 2 Tbsp. canola oil
• Salt and pepper
• Curry butter
• A handful of cilantro
• ½ cup pickled (Banh Mi) veggies
• Curry butter- in a food processor combine ¼ cup butter, zest from 1 lime, and 1tbs curry powder and blend
Directions
• In a large skillet add 2 tbsps. canola oil under medium-hot heat
• Salt and pepper trout fillets and place in hot skillet with skin side up
• After 3 minutes, flip. Turn off heat after 2 minutes
• Place trout fillets on plate
• Top fillets with pickled veggies and curry butter, garnish with fresh cilantro
