GOLDEN VALLEY, Minn. - Spring has sprung and we’re all looking for ways to incorporate fresh, local produce into our diets.
Bushel Boy Farms CEO Keith Kersten and Minneapolis Foodie Sue Zelickson share their mouthwatering tips for enjoying local tomatoes this season.
Sue works hands-on in the kitchen to demonstrate a delicious recipe, while Keith shares the sweet secrets behind Bushel Boy Farms tomatoes.
Chopped BLT Salad Spread
1 Pint Bushel Boy Baby Boy tomatoes – quartered
2 cups Romaine lettuce – finely shredded
6 slices Thick cut bacon - cooked and roughly chopped
½ cup Mayonnaise (optional half mayo and half yogurt)
Salt & pepper to taste
Combine and refrigerate for two hours before serving.
This recipe can be customized in so many ways:
• Add blue cheese crumbs
• Add feta cheese chunks
• Add avocado chunks
• Add different spices like dill, curry, ground fennel, cumin or many other tastes
• Substitute the mayo with Caesar dressing, cream cheese, blue cheese dressing, 1000 Island dressing or combinations of these and other dressings
Serve on:
Hearty multi grain bread or rolls
Any kind of toast, crackers or large croutons
Wrap it in a lettuce leaf or on top of a romaine leaf
Place it in a taco shell or wrap it in a tortilla
Use as a topping on a hamburger or on a BBQ pulled pork sandwich
