Amped Up: Chocolate avocado pudding

GOLDEN VALLEY, Minn. - Celebrate the final day of National Nutrition Month with a fabulous dietitian-approved dessert!

Savage Hy-Vee dietitian Melissa Bradley, RD, LD will show you how to whip up a quick and easy dessert to please any chocolate lover. Your family will never guess the secret ingredient to create this creamy Chocolate Avocado Pudding!

Avocadoes are packed with beneficial vitamins and minerals and can be used as a healthful fat substitute when cooking or baking.

RECIPE for Chocolate Avocado Pudding

Serves 4

All you need:

2 very ripe avocadoes, seeded, peeled and halved

½ cup Dutch processed cocoa

½ cup agave nectar

½ cup vanilla almond milk

½ cup vanilla extract

Chopped pistachios, for garnish

All you do:

1. Place avocadoes, cocoa, agave nectar, almond milk and vanilla in a blender. Cover and blend until smooth. Divide mixture among four dessert dishes. Garnish with pistachios, if desired.

Per serving: 330 calories, 18 g fat, 2 g saturated fat, 0 g trans fat, 0 mg cholesterol, 30 mg sodium, 47 g carbohydrates, 10 g fiber, 31 g sugar, 4 g protein.
