Motivation Monday: Meatless grilling ideas

Now is the time to buddy up with your backyard grill.  In addition to freeing you from dirty pots and pans to clean, your grill can amp up your dinner plate with healthy flavors.

GOLDEN VALLEY, Minn. -- Now is the time to buddy up with your backyard grill. In addition to freeing you from dirty pots and pans to clean, your grill can amp up your dinner plate with healthy flavors.

The focal point is often meat, but GetHealthyU's Chris Freytag says the produce department yields fantastic grilling options.

Vegetables are grilling superstars with little fuss. Chris opts for bigger pieces brushed with olive oil and spices. Use a basket or you can put them in non-stick foil.

Root vegetables, like potatoes, do well on the grill. Sweet potatoes are particularly healthy. Again, start raw with larger pieces, and brush with olive oil and spices for extra oomph.

Why not include some dessert options? Fruit bursts with flavor when grilled. Chris recommends starting with firm, raw fruit. Overripe fruit can become mushy when grilled. Place fruit on skewers or non-stick foil. Drizzle with a little maple syrup for a sweet finish, or balsamic vinegar for a more complex pop of flavor.

Why stop there? Chris has many more grilling ideas on GetHealthyU.com.
