Chipotle Chicken Salad in Lettuce Cups

GOLDEN VALLEY, Minn--Traditional chicken salad gets a new look and is loaded with flavor and not the unnecessary fat. Using Greek yogurt and chipotle peppers in adobo sauce makes this quick chicken salad a satisfying dish and you will know that your kids are eating something that's good for them.

Kirsten Shabaz, the Fresh Foods Educator at Valley Natural Foods, who leads the co-op's fresh foods demo program joined us on KARE News@4 to serve up the salad and to tell us about an upcoming event.

1 lb. cooked chicken breasts, diced
2 stalks celery, minced
2 green onions, green & white parts sliced
2 cloves garlic, minced
1 Tbsp. fresh lime juice
1/2 tsp. ground chipotle peppers
1- 1 1/4 C. plain Greek yogurt
1 head Future Farm's Bibb lettuce, rinsed & leaves separated
2 avocados, sliced
Cilantro for garnish


In a large bowl, mix together the diced chicken, celery, green onions, garlic, fresh lime juice, ground chipotle pepper powder & greek yogurt until well combined. Serve about 1/2 cup of the chicken salad in each Bibb lettuce leaf, top with a few slices of avocado and garnish with cilantro.
