GOLDEN VALLEY, Minn. - If you're looking for an excuse "not" to cook this week, look no further.
You can eat out for "Dining Out for Life" on Thursday, to support HIV/AIDS programs in Minnesota, primarily through The Aliveness Project.
KARE 11's Sven Sundgaard and Rena Sarigianopoulos will help host the day's events around the twin cities.
More than 180 restaurants across the state are taking part including the Blackbird in Minneapolis.
Chef Chris Stevens visited KARE 11 Sunrise to talk about the event, and cook up some breakfast.
Red Flannel Hash
1 potato, peeled, cut into ½" dice
1 sweet potato, peeled, cut into ½" dice
1 beet, peeled, cut into ½" dice
1 small red onion, ¼" dice
2 Tablespoons minced fresh parsley
2 Tablespoons cooking fat (butter, olive oil, bacon fat!)
Melt fat in heavy cast iron fry pan, add potatoes, yams, beets and onions and cook over medium heat till browned and tender. Add minced parsley, salt and pepper to taste. Add your favorite breakfast meat and top with fried eggs.
