GOLDEN VALLEY, Minn. - Celebrate Cinco De Mayo by kicking up your guacamole with some fresh mangos. Westan Winkler from Rojo Mexican Grill visited KARE 11 News at 4 to show us it's as simple as chopping and assembling!
2 oz 1/4" diced mangos
5 oz toasted pepitas (pumpkin seeds)
1 oz crumbled goat cheese
2 oz 1/4" diced tomatoes
2 oz 1/4" diced red onion
0.2 oz Rojo Tequila
1 oz minced jalapeno
0.25 oz chopped cilantro
Scoop Guacamole into molcajete bowl.
On left side evenly place mango in a vertical column. Place tomatoes next to mango, then place red onions next to mango.
Next to red onion place goat cheese. Next to goat cheese place toasted pepitas. Next to pepitas place jalapenos. Next to jalapenos place cilantro.
Drizzle tequila over top of ingredients.
Serve and enjoy!
