Special weekend recipes from North 45 Executive Chef

MINNEAPOLIS --  Executive Chef Don Fleming of North 45 Restaurant in Minneapolis joined KARE in the kitchen Saturday to cook up a Minnesota favorite in honor of this weekend's fishing opener.

North 45 is located in the newly renovated Millennium Hotel Minneapolis and in honor of the Governor's fishing opener Chef Fleming shares his favorite recipe for cooking up Walleye.

North 45 Walleye Recipe

Beer Batter
5 Cups Tempura
3 Cups Water
1 Cup Beer
Mix all Three ingredients in a bowl with a whisk until blended

Preheat Fryer Oil to 350 Degrees Farenheight. Lightly Season Walleye with Salt and Pepper, then Dredge in Flour, and then in Beer Batter. Gently Place Walleye in Fryer and cook for about 3-4 Minutes until Golden Brown and an Internal Temperature of 165 Degrees Has Been Reached

Tartar Sauce

Two Cups Mayonnaise
¼ Cup Fresh Lemon Juice
1/8 cup Minced Onion
4 each Baby Dill Pickles(diced)
3 Tablespoons Malt Vinegar
1 Dash Tabasco
1 Teaspoon Fresh Chopped Dill

Don't think Chef Fleming forgot about Mother's Day Sunday. Here's his recipe for carbonated strawberries, a special treat to share with mom on Sunday.

Carbonated Strawberries:

  • Fresh strawberries
  • Dark chocolate
  • pop rocks

Temper chocolate in a double broiler. Remove chocolate from heat when it's completely melted and gently roll the strawberries in it to coat all sides. Before the chocolate melts, sprinkle on the Pop Rocks. Refrigerate until the chocolate hardens before serving.
