Pahl's Market shares cooking with corn recipes

GOLDEN VALLEY, Minn. - As much a part of a Minnesota summer as mosquitoes and sunburns, so too is our love of corn.

Pahl's Market in Apple Valley is gearing up for a big celebration of the yellow ears.

Master Gardener Jackie Overom aka the Green House appeared on KARE News @4 today  to fill us in and also to share some great ways to cook with corn.

"Grandma Pahl's Frozen Corn"

9 C - fresh corn, removed from the cob

2 C - cold water

1 Tbsp. salt

¼ C sugar

1 stick of butter (cut up and spread evenly over corn)

Place corn in a 9" x 13" pan. Add 2 cups of cold water, spread evenly cut butter over corn, sprinkle salt and sugar. Bake at 350 degrees for 30 minutes. Bag corn but let cool before sealing bags (approx. 1 ½ to 2 cups of corn with juices per bag). Freeze. Enjoy all year round!

On a hot day wouldn't you love to be as cool as a cucumber? Let's make "Cucumber Dip."

½ cucumber

½ medium onion

2 small cloves of garlic minced

3 fresh green onions

1 pint sour cream

1 - 8 oz. package of cream cheese

A few snips of chives

Salt & Pepper to taste

Peel cucumber and finely chop. Mix sour cream and cream cheese until well blended. Combine all ingredients and stir well. Serve with crackers or chips.

"Stuffed Poblano Peppers"

Serves 8 from Celia Scheel

4 Poblano peppers

1 small onion chopped

½ C chopped green pepper

½ C chopped sweet red pepper

1 C corn

1tsp. fresh thyme

1 tsp fresh basil, chopped

2 tbsp olive oil

2 C shredded Mexican cheese

¼ tsp dried red chile pepper

Salt & Pepper to taste

Cut poblano peppers in half lengthwise and remove seeds. Sauté the rest of the ingredients (except the cheese) for 10 minutes or until crisp tender. Divide the filling between the 8 poblano halves. Place on medium hot grill for 5 minutes. Top with the shredded cheese and heat until it melts.
