Honey Cinnamon Raisin Bread

2 ½ cups water (105-115 degrees)

2 packages active dry yeast

2/3 cup nonfat dry milk

1/3 cup honey

1/3 cup butter

1 tablespoon salt

2 eggs

6 ½ to 7 cups flour

1 cup raisins

2 tablespoons honey

1-2 teaspoon cinnamon

Dissolve yeast in water. Add dry milk, 1/3 cup honey, butter, salt, eggs and 3 cups flour. Blend together on low speed, beat 3 minutes at medium speed.  Add rest of flour to make a firm dough, add raisins and knead until smooth and elastic. Place in lightly greased bowl. Cover and let rise in warm place until double in bulk. Punch down. Form into 2 equal parts. Cover and let rest 10 minutes.

Roll out each part to a 12 x 8-inch rectangle. Spread each with 1 tablespoon honey and sprinkle with half the cinnamon. Roll up. Seal edges. Place in greased loaf pans. Cover. Let rise until double in bulk. Bake in preheated oven at 375 degrees for 35-45 minutes. Remove from pans immediately, place on wire rack to cool.

Loaves may be brushed with butter. Makes 2 loaves.
