Sweet Potato Parsnip Latkes:

Ingredients
4 cups sweet potatoes, shredded
1 cup onion, shredded
2 parsnips, shredded
1 cup all-purpose flour
2 eggs, beaten
Salt
Pepper
Canola oil for frying

Directions
Mix all of the ingredients together. Heat cast iron skillet and reduce to medium high heat. Overfill a tablespoon and drop into the hot oil. Flatten with a fork. Cook until brown on one side, flip and cook until brown on the other side. Serve hot.
