Collard Greens with Smoked Turkey:
1-2 bundles of fresh collard greens
1-2 smoked turkey tails (may also use smoked turkey necks)
Seasoned salt, iodized salt, or garlic (to taste if needed)
Place Collard Greens in sink filled with water to soak. Bring to boil 3 quarts water in a large pot. Add Turkey to the boiling water. Let boil for about 10-15 minutes. Dice onion and set aside. Wash and shake greens thoroughly. Pill or slice collard greens from stems. Place green leaves in piles of three to four, roll and slice into 1 inch thick slices. Continue until all greens are sliced. Add greens and onions to the boiling water with turkey. Continue to boil for about 35- 55 minutes, stirring occasionally. Greens will have shrunk and the water will be very low. Turkey should be tender and loosen off the bones. Taste and add seasoned salt, iodized salt, or garlic to taste. Serve as a side dish or pair it with cornbread!
