GOLDEN VALLEY, Minn. - All this week, KARE 11 News at 4 has been showing favorite holiday appetizers. We also invited viewers to send us their favorite.
So, we'd like to introduce you to viewer Rick Casey's Cheesy Onion dip and pickled cucumbers.
Cheesy Onion Dip
(Preheat oven to 425 degrees)
24 oz- Cream Cheese softened
12 oz- Bag of Frozen Chopped Onions
2 c. Shredded Parmesan Cheese
½ c. Mayonnaise
Defrost and drain onions. Note- If using a fresh onion, about 1 whole chopped. Mix all ingredients together in large bowl. Pour into a baking dish. Bake 20-25 minutes at 425 degrees until a very light golden brown on top. Serve warm with chips or Rick's favorite Fritos "Big Scoops."
Rick's Sweetened/ Pickled Cucumbers
1 c. - vinegar
2 c. - sliced cucumbers
1/2 c.- sugar
1 tsp.- pepper
1 c. - water
2 tsp - salt
Mix ingredients and let it marinade the cucumbers for a minimum of half an hour.
