Extend shelf life by canning food

MINNEAPOLIS -- Produce Exchange at the Midtown Global Market will be hosting No Coast Craft O Rama on two separate dates in December.

Bill Schmelzer, canning and flavor expert, will be at the events offering canning advice including a 6 month shelf life on a traditional canned cranberry sauce; recipe found below.

No Coast Craft O Rama will be held December 6 from 3 p.m. to 8 p.m. and December 7 from 9 a.m. to 5 p.m.


Classic Cranberry sauce

1 1/4 cups water or other liquid of choice

1 1/4 cups organic cane sugar



Bring to a boil.

Add 1 pound of cranberries.  

Bring back to a boil and simmer 8-10 minutes until desired consistency is achieved.  

For use with 7-10 days: Take off the heat and allow to cool, transfer to jars and keep in refrigerator.  

For pantry storage (12 month shelf life): Pour hot mixture into hot canning jars, clean rims of jar, place lid and rings on jars.  Place the filled jars in a boiling water canner. Once the canner returns to a boil process 15 minutes for pints. 

Makes approximately 2 pints.
