Ike's Celebrates Its 7th Birthday

GOLDEN VALLEY, Minn.--  Ike's chef Andy Shrader and mixologist Brian Brune stopped by our kitchen this morning to give us a taste of the restaurant's 7th birthday celebration.  

While known for their cocktails, steaks, and famous burgers, the downtown Minneapolis hot spot also features fresh, made-to-order tableside guacamole.

Ike's Made-to-Order Guacamole
Served with Tortilla Chips 

1 and 1/2 ripe Avocados
1/2 c Pico de Gallo* 
1T Guacamole Seasoning*

*Pico De Gallo
4 Roma Tomatoes, diced into 1/4" pieces
1/2 cup Red Onion diced into 1/4" pieces
1 Jalapeno, remove seeds and mince
1 clove of Garlic, minced
1/4 c chopped fresh Cilantro

*Guacamole Seasoning
1 teaspoon of fresh Lime juice
1/2 teaspoon Tabasco
1/2 teaspoon Chili Powder

1. Mix the Pico De Gallo and Seasonings ahead of time.

2. Mash up avocados and mix in the pico and seasonings until desired consistency.  This can be left chunky or made into a smoother mix.

3. Enjoy with tortilla chips.
