GOLDEN VALLEY, Minn. -- Today Ben Mattson from Chipotle joined us to talk about the restaurant's "Food with Integrity" program.
Chipotle is seeking better food not only from using fresh ingredients, but ingredients that are sustainably grown and naturally raised with respect for the animals, the land, and the farmers who produce the food. On top of "Food with Integrity", all of Chipotle's Minnesota restaurants are now serving Just BARE Chicken. In all, this amounts to more than 5 million pounds of locally grown produce. About a third of the local produce is coming from within 50 miles of each restaurant.

Chipotle's Spicy Guacamole
2 large ripe avocados, peeled, pitted
4 teaspoons fresh lime juice
1 cup chopped fresh cilantro
1/2 cup finely chopped onion
4 large garlic cloves, finely chopped
4 large serrano chilies seeded, chopped
1/2 teaspoon salt
1. Using a fork, mash avocados with lime juice in small bowl.
2. Add cilantro, chopped onion, chopped garlic, serrano chilies and salt and stir to combine.
3. Makes about two cups.
