Mix it up! Refreshing summer drinks from Baja Sol

GOLDEN VALLEY, Minn--Kenny Robinson from Baja Sol Cantina stopped by KARE News@4 to whip up some refreshing summer drinks.  Here there are:

Dreamsickle - the childhood ice cream treat grew up into an adult classic at Baja Sol Cantina locations. To introduce to the market their house-infused tequilas, they've created an orange vanilla tequila that brings childhood summer memories rushing back with every sip.

1-1/2 oz Orange Vanilla infused Tequila
1 oz Simple Syrup

2 oz Orange Juice

1 splash Sprite

1 oz Whip Topping

1 orange moon slice

1 Maraschino Cherry


Wicked Twin- as the Broadway hit, Wicked, returns to Minneapolis, Bloody Mary's Wicked Twin also rears her vivacious head. The spicy house-infused pepper tequila adds a true bite to this Mexican green drink. Finish it off with a jalapeño popper garnish and you're mouth will be tingling long after the last sip. 


1 tsp House Seasoning or Margarita Salt

1-1/2 oz Pepper Infused tequila

6 oz Tomatillo Juice

1 Jalapeno Popper (optional)



Here is the recipe for the non-alcoholic alternative


Pineapple Agua Fresca

1 each Fresh Golden Pineapple

1 pint simple syrup - note

2 qrt cold water


Clean the skin from the pineapple and remove the core

Chop pineapple into small pieces and place in blender or food processor

Add the simple syrup and the water. Blend thoroughly, at least 1 minute

Strain the juice through a fine sieve to remove the pulp

Chill until ready to serve, mix thoroughly before pouring into a glass


Note: The amount of simple syrup used can be varied depending on the sweetness of the fresh fruit or personal taste. Start by adding only half the syrup to begin with and then add more to taste if necessary.
