Pork and cabbage potstickers

GOLDEN VALLEY, Minn. -- Cathy Winter, a local entrepreneur and owner of Gather Gourmet prepared gourmet potstickers to celebrate the Chinese New Year.

Pork and Cabbage Potstickers

2 1/2 cups all purpose flour
3/4 tsp. salt
1 cup boiling water

1 lb. ground pork
1 lb. napa cabbage, chopped
1 Tbsp fresh grated ginger
1/2 tsp. salt
2 teaspoons sesame oil

2-4 Tbsp. vegetable oil, for frying

In a large bowl, mix flour and salt together, then add boiling water.  Mix until a soft dough forms, then knead on a lightly floured surface until smooth, about 5 minutes.  Cover tightly with plastic wrap and set aside.
In another bowl, mix filling ingredients.

Divide the dough in half.  Shape each half into a roll 3/4 to 1 inch in diameter, then slice the roll into 1/2 inch rounds.  Using the palm of your hand, flatten each piece of dough into a small circle and then using a rolling pin, roll into a 3 inch circle. Place 1 Tbsp. of the pork mixture in the center of the circle.  Pinch the circle together in the middle, then pinch pleat each side until the dumpling is sealed.  Repeat with remaining dough pieces and filling.

Heat 1 Tbsp. oil in a non-stick pan over medium-high heat.  Set potstickers in pan and fry 1-2 minutes until bottoms are golden brown. Add 2/3 cup water, cover and simmer for 8-10 minutes, until no liquid remains.  Uncover and loosen potstickers with spatula.

Makes about 4 dozen pot stickers.
