SHAKOPEE, Minn. -- Kentucky Derby Day at Canterbury Park will feature food and beverage specials including the Chocolate Mint Julep Trifle with Red Stag Black Cherry Bourbon.
Chocolate Mint Julep Trifle with Red Stag Black Cherry Bourbon
Cherry Bourbon Chocolate Cake
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
¾ cup unsweetened cocoa
2 cups sugar
1 cup vegetable oil
1 cup hot coffee
1 cup milk
2 eggs
1 teaspoon vanilla extract
2-4 Tablespoons Jim Beam "Red Stag" Black Cherry Kentucky Bourbon Whiskey
Sift together dry ingredients in a mixing bowl. Add oil, coffee and milk; mix at medium speed for 2 minutes. Add eggs and vanilla; beat 2 more minutes. (Batter will be thin.) Pour into two greased and floured 9-in. x 1- 1/5 in. cake pans. Bake at 325 degrees for 25-30 minutes. Cool cakes on wire rack for 15 minutes. With a fork pierce the cake several times. Drizzle about 1-2 Tablespoons of "Red Stag" Black Cherry Kentucky Bourbon Whiskey over each cake. Dice (3/4") 8 cups of the cake.
Whipped Cream
1 1/2 Cups Heavy Cream
¾ Cup Powdered Sugar
1 tsp Crème De Menthe
Whip heavy cream until soft peaks form. Stir in powdered sugar. Reserve one cup of whipped cream for the Whipped Cherry Cream Cheese. Stir 1 tsp of Crème De Menthe into the remaining 2 cups.
Whipped Cherry Cream Cheese
3/4- 21oz Can Cherry Pie Filling (reserve ¼ can, for garnish on top)
4oz Cream Cheese, softened
2oz Butter, softened
1 tsp Vanilla
½ lb Powdered Sugar
1 cup Whipped Cream
Whisk together first five ingredients in a bowl. Fold in whipped cream.
1 bunch Fresh Mint (garnish on top)
Trifle Assembly
In a jumbo martini glass or glass bowl place 4 cups of diced chocolate cake in the bottom. Next spread 4 cups of Whipped Cherry Cream Cheese over cake. Top with 4 more cups of chocolate cake. Spread Crème De Menthe Whipped Cream over cake. Place ¼ can cherry pie filling in the center and garnish with fresh mint.

SHUTTLE BUS SERVICE
There will be a shuttle bus from the Mall of America to Canterbury Park at noon on Saturday, May 7th. The bus departs from the Mall of America Shuttle Station located near Nordstrom and Sears across from Lindau Lane. Return time is approximately 6:30 PM.
