Cooking up breakfast with the Peanuts gang

  • GOLDEN VALLEY, Minn. -- Who wouldn't want to have breakfast with the gang from Peanuts? Snoopy, Charlie Brown and Lucy joined KARE 11 Today to cook up a pancake meal. They cooked up a recipe that you can enjoy at the Valleyfair character breakfast Saturdays this summer.

    ValleyFair Funnel Cake

    Ingredients: Funnel Cake Batter OR
    Favorite Pancake Batter

    Pour oil in to an 8 inch deep pan until pan is approximately ½ full.

    Let oil heat to 350 degrees.  While oil is heating, prepare toppings for your funnel cakes. Prepare an area for your funnel cakes to rest. Place a layer of paper towels on a plate and/or pan in which to place your funnel cake when it is removed.   Mix batter well to a pourable consistency. Ensure it is not too thick, or have lumps, that will not cook up.

    Pouring the Funnel Cake:  Use a funnel batter pitcher and/or other pouring device that allows for an even flow of batter.  Start pouring funnel cake batter into the pan, (do not tilt the pitcher more than 45 or you will overflow the pitcher).  Pour on a circular motion starting with the outer part of the ring working your way around. The final product should not be more than an inch thick.

    After finishing pouring let the funnel cake fry for 30 seconds on one side then flip and let it fry until is golden brown on both sides.

    Remove funnel cake from oil with tongs and place on plate with paper towels.  Drain away excess oil.  Place funnel cake on fresh plate and serve with selected toppings.

    Toppings:

    Sift powdered sugar onto surface of funnel cake using a sifter. There should be a light coating of sugar over the entire surface of the cake. Serve.

    Deluxe Funnel Cake:

    A deluxe funnel cake is served with whipped topping and your choice of chocolate, strawberry, or caramel topping. It is a good idea to make the customer aware of this fact prior to ringing up the order.

    Top the funnel cake with whipped topping.

    Drizzle selected toppings on top of the whipped topping.
    A shake of powdered sugar may be sifted on to the top of the finished cake.  Serve

    Fresh apple pie filling
    Maple and/or flavored syrup
