Tria Restaurant celebrates Oktoberfest

GOLDEN VALLEY, Minn.--  Chef Brian Bossert from Tria Restaurant joined us this morning to talk about their annual Oktoberfest menu and celebration.

Oktoberfest at Tria will be Thurs., Sept. 29 and will feature live Polka music.  The menu will include Roasted Hog, Braised Red Cabbage, Hot German Potato Salad; Bratwurst with all the Fixings, Rueben Balls and Apple Strudel Ala Mode, Beer.

Roasted Pork Chop and Brine

Ingredients:
• Bone-in pork chop (1/2 to 3/4 inch thick)
• 7 cups hot water
• 1/2 cup kosher salt
• 2 cups apple cider
• 1/2 cup maple syrup
• 2 Tablespoon black pepper

Brine:
Combine ingredients and bring to boil.   Cool completely.

Pork Chop: 
Inject brine into each chop and/or let marinate for 1-2 days.

Preheat oven to 350 degrees.  Warm saute pan to medium heat.  Add butter to saute pan and add pork chops.  Brown pork chops on each side.  Add salt and pepper to taste to each side.  

Transfer to baking dish and cover with foil.  Add additional brine to baking dish.  Bake for 1 hour or until tender.
