Ensalada De Navidad (Christmas Salad)

1/2 head of Romaine lettuce, cleaned, cut, washed and dry
3 small cooked beets, peeled and diced
1 apple, cored, peeled and diced
2 oranges peeled and sliced
1/4 pineapple, cored, peeled and dice
1 large banana, sliced
1/2 cup of unsalted roasted peanuts or roasted almonds
1 pomegranate (just the seeds)

3 tbsp cider vinegar
2 tbsp sugar
3 tbsp corn oil
A dash of salt

Mix Romaine lettuce and fruits. In a mixing bowl, put vinegar, sugar and oil and mix until sugar has dissolved. Put dressing over the salad and toss well. Let it stand in refrigerator until chilled.

Serve in a salad bowl and garnish with the peanuts and pomegranate seeds
