GOLDEN VALLEY, Minn - Here in Minnesota, we wait all year for dining al fresco. 

Registered dietitian Chere Bork offered some great ways to enjoy the season with some delicious recipes and refreshing beverages that can turn any outdoor meal into a celebration.

Sauteed Basil and Garlic Vegetables

2 Tablespoons Country Crock®Spread
1 lb. of your favorite vegetables (red onions, zucchini, asparagus, bell peppers) coarsely chopped
½ lb green beans, trimmed
¼ cup fresh basil, chopped (optional)
1 clove garlic, finely chopped

Heat Country Crock®Spread in 12 inch nonstick skillet over medium heat and cook vegetables and green beans, stirring occasionally. Combine basil with garlic in small bowl, then evenly sprinkle over vegetables. Cook 1 minute.

Serves four.

Mediterranean Relish

1 medium onion, chopped
1 jar 7 ½ ounces marinated artichoke hearts, drained and chopped
1 jar 7 ounces oil-packed sun dried tomatoes, drained and chopped
½ cup canned crushed tomatoes
¼ pimento stuffed green olives, chopped
¼ cup fresh basil, chopped
2 Tablespoons fresh Italian parsley, chopped
3 cloves garlic, minced
2 tsp olive oil

In a bowl combine all ingredients. Season with salt and pepper to taste. 

Enjoy with Johnsonville Chicken Three Cheese Italian Style or Johnsonville Pork and Chicken Mild Italian or Johnsonville Pork and Chicken Traditional Bratwurst.
