Caprese Salad Sandwiches
Make a simple Caprese salad: grill or fry up some steak or chicken, cut into small cubes. Cut up some fresh mozzarella into small cubes. Cut up some cherry tomatoes into small cubes.
In a medium bowl add equal parts meat, mozzarella and tomatoes. Add a little salt and pepper. Sprinkle with some italian dressing, not too much, just enough to coat it.
Buy some naan bread or pita bread. Heat on grill or frying pan over medium heat for 1 minute each side or until soft.
Place 2 large spoonfuls of the salad in the middle of the bread and fold like a taco.
Refrigerate unused caprese salad for up to a week.
Eat and smile.
