FALCON HEIGHTS, Minn.-- Every year, hundreds of Minnesota home cooks and bakers show off their best recipes, hoping to win not only bragging rights but also a coveted ribbon.
And that's exactly what Lisa Silmser did this year. She recently took 3rd place in the 2012 Pillsbury Pie Crust Pie Baking Championship. This morning, Lisa dropped by the KARE Barn at the Fair to share her winning recipe for "Grilled S'more Crostata".
Lisa's "Grilled S'more Crostata" will be on display throughout the fair in the Creative Activities Building. For details, visit mnstatefair.org.
Grilled S'more Crostata
1 Pillsbury Refrigerated Pie Crust
1 cup chocolate chips
1/3 cup cream
2/3 cup sugar
1 large egg and 1 egg yolk
1 cup miniature marshmallows, or more to taste
1 cup graham crackers (small squares or regular size, broken), or more to taste
Unroll pie crust onto heavy duty tin foil that has been sprayed with nonstick cooking spray. Pinch edges of pie crust to form a rustic edge. In a small saucepan on low, melt chocolate chips, cream, and sugar together. Stir until smooth. In a separate bowl, whisk egg and egg yolk until slightly foamy. Slowly add chocolate mixture to the eggs, whisking continuously until they are combined. Spread chocolate mixture into crust. Sprinkle with graham cracker pieces onto the chocolate around the outer edge of the crostata. Place on outdoor grill on medium heat (approx. 400 degrees) for 10-12 minutes, or until crust is golden and chocolate mixture is set. Then sprinkle with marshmallows and continue to grill until toasted, 2-4 minutes. Can be served warm or cooled. Tip: Marshmallow edge will cut easily if a wet knife is used. Makes 8-10 servings.
