Porketta Seasoned "Pig Wings" with fennel-apple slaw
1/2 cup chopped fresh parsely
2 tablespoons paprika
2 tablespoons salt
1 tablespoon garlic powder
1 tablespoon pepper
1 tablespoon oregano
1 tablespoon cracked fennel seeds
1/2 tablespoon thyme
Pig wings are sourced from a local butcher and slow roasted at 350 for 2.5 hours while wrapped in foil.
Dust with the porketta spice and allow to sit for 1 hour or more. Grill each wing on at least 3 sides to obtain a nice char and caramelization.
Top with fennel & apple slaw and serve
Fennel & Apple slaw
2 each fennel bulbs, cored and shaved
1 green apple, cut into 2" X 1/4" jullienne
For the dressing
2 cups maynnaise
1/2 cup canola oil
1 garlic clove, chopped fine
2/3 cup sugar
2 tablespoons white vinegar
1 teaspoon kosher salt
1/2 teaspoon white pepper
1 teaspoon celery seed
1/2 teaspoon paprika
1/8 teaspoon cayenne pepper
Use 1/4 cup of slaw for above amount of fennel and apple
