Apple Nachos

·     3 crispy and slightly tart apples {pink lady, gala, macintosh, cored and sliced thin

·     1 tsp lemon juice

·     3 tbsp creamy almond butter

·     1/4 cup sliced almonds

·     1/4 cup flaked unsweetened coconut

·     1/4 cup enjoy life chocolate chips

Add thinly sliced apples to a small bowl with lemon juice and toss to coat.

On serving tray spread out apple slices in thin layer.

Melt almond butter in microwave until runny, about 1 minute.

Drizzle over apples.

Top with almond, unsweetened coconut and chocolate chips.

Serve and enjoy

 

Banana Oatmeal Crumb Muffins with Avocado

Ingredients:

1 tablespoon flaxmeal

3 tablespoons water
3 ripe bananas
3 ounces vanilla  yogurt

1/2 cup organic sugar
1/2 avocado, peeled, pitted, and mashed
1 1/2 teaspoons vanilla extract
1 cup white whole-wheat flour
2 scoops protein powder
1 teaspoon baking soda
1/2 teaspoon salt

Crumb topping:

1/3 cup brown sugar
3 tablespoons white whole-wheat flour
2 tablespoons rolled oats
1/8 teaspoon cinnamon
1 tablespoon butter
 

Preheat oven to 350°F. Line a muffin pan with 12 liners. 
In a small bowl, mix the flaxmeal and water together, and set aside.
In a medium-size bowl, mash the bananas with a fork. Add the soy yogurt, sugar, avocado, and vanilla and mix until combined. Add the flaxmeal and water mixture.
In a separate bowl, mix together the flour, protein powder, baking soda, and salt. Stir that into the banana-avocado mixture.
Divide the batter between the 12 muffin cups.
Now it's time to make the crumb topping. In a small bowl, mix together the brown sugar, flour, rolled oats, and cinnamon. Add the cold butter and use a fork to mix it into coarse crumbles.Sprinkle a little oat crumble on top of each muffin.
Bake for 18-20 minutes.

 

Pumpkin Granola

Ingredients

·       3½ cups old fashioned oats

·       ¾ cup coconut

·       1 cup sliced almonds

·       1½ tsp Cinnamon

·       ¼ tsp Nutmeg

·       1 cup Pumpkin puree

·       ¼ cup Maple syrup

·       1/3 cup Apple juice

·       2 Tbsp Olive oil

Preheat the oven to 300 degrees. Combine oats, coconut, almonds, cinnamon and nutmeg and set aside. Mix together pumpkin puree, maple syrup, apple juice and olive oil until smooth. Pour over oat mixture and mix together until oat mixture is evenly covered. Spread onto a greased baking sheet and bake for 1 hour and 30 minutes. Stir every 10-15 minutes to break up clumps and even browning. Cool on pan, still stirring occasionally, once cooled store in an airtight container. 

 

Monster Apple Mouths

·       1 green apple

·       1/2 cup creamy peanut butter

·       1 cup yogurt-covered raisins

Slice apple into 10-12 equal pieces. Slather peanut butter on each slice.

Position yogurt-covered raisins between two apple slices as "teeth."
