Tomato, Cucumber and Avocado Salad
4 Roma Tomatoes
3 ripe avocados
½ red onion
1 English cucumber
¼ cup cilantro
1 tablespoon lemon juice
2 tablespoons extra virgin olive oil
½ teaspoon Livia’s Seasoning Salt
Place chopped cucumber, Roma Tomatoes, avocados, diced red onion and cilantro in large bowl. Toss with olive oil, lemon juice and Livia’s Seasoning Salt. Yields 6-8 servings.
Grilled fresh Norwegian salmon with lemon and Livia’s
5 oz. Norwegian Salmon filets, skin on
Extra virgin olive oil
1 tablespoon Livia’s Seasoning Salt
Brush olive oil on salmon, skin side down
Drizzle lemon juice on fish and sprinkle with Livia’s Seasoning Salt to taste
Cook 7-8 minutes without turning until flaky
Grilled Corn on the Cob
Fresh sweet corn, husks on
Livia’s Seasoning Salt
Gently peel husks back to within two inches of the base
Remove silk and smooth husks back into place, completely covering kernels
Fill a sink with ice water and soak corn for 30 minutes (The cold water stop the sugars in the corn from turning to starch)
Drain and shake off excess water
Generously oil the grill to prevent sticking
Grill directly over medium to medium hot colas five inches from the heat, turning occasionally until tender, about 15 minutes.
Open carefully and brush on melted butter and sprinkle with Livia’s Seasoning Salt to taste
