Amped Up: Miso Salmon and Ronald McDonald's Cooks for Kids

Chef Daniel Green showcases a new program where you can learn to cook, while volunteering at the Ronald McDonald House charities.

GOLDEN VALLEY, Minn. - Chef Daniel Green is helping the local chapter of Ronald McDonald House Charities revamp their “Cooks for Kids” (CFK) meal program by developing a new set of recipes.

Green's creations include healthy takes on old favorites, exciting new flavors, and dishes to celebrate the seasons.

Miso Salmon
Serves 2
I designed this dish for the airline KLM, they serve this on the transatlantic routes into Amsterdam. It is modern, tasty and Japanese cuisine at its best

2 filets salmon, 4-5 oz each
Marinate in:
1 tablespoon grated fresh ginger
1 clove garlic, crushed
2-3 tablespoons honey
3 tablespoons mirin
2 tablespoons Miso paste (buy in Asian stores)
The juice of 1 large lemon

Mix all the marinade together, brush it on the salmon and place under the grill to caramelize for 3-4 minutes, then lower the fish on a shelf in the oven and cook for another 7-8 minutes at 400 deg.
Keep basting the fish to add more marinade.
To serve, add a little more marinade and accompany it with jasmine rice.
