John Schumacher of Schumacher's Hotel and Grill joined us this morning with information about the reopening of his hotel and restaurant New Prague and a recipe for Candy Apple Upside Down Cake.

Candy Apple Upside Down Cake
Standard Yellow Cake Mix or 6-8 cupcakes
4 Large or 5 Medium-sized Hard Apples (Green Granny Smith or Wine Sap)
Cut apples in half
Then cut apples into quarters
Remove center core
Cut each quarter apple into 3 slices
Place apples in bowl of water with 1 Tablespoon of Lemon Juice (to keep apples from browning)
To Make Caramel:
Use a Heavy sauce pan
2 cups brown sugar
1/2 stick butter
1/4 cup heavy cream
Cook over Medium heat.
Bring brown sugar mixture to a slow bubble, stirring often with a wooden spoon.
Let caramel bubble for 5 minutes.
Drain and add apple pieces.
Gently stir.
Reduce heat to low.
Cook for 10 minutes.
Remove to container to serve chilled or top cake base with generous amount of apple mixture and serve warm.
Serve with whip cream or ice cream.
