GOLDEN VALLEY, Minn. - Every mom deserves breakfast in bed on Mother's Day.
With some tasty shortcuts, a dad or family member and the kids can give Mom a delicious, gourmet breakfast this Mother's Day without the mess or hassle.
Mom Blogger Alice Feuffert joined KARE 11 News @ 4 with two of her easy favorites, Grilled French Toast Breakfast Sandwiches and Pear & Scrambled Egg Breakfast Pizza.
Alice says there are a lot of pre-packaged products you can buy in your local grocery store that give you that home-made taste but save you time and virtually eliminate the mess.
Grilled French Toast Breakfast Sandwiches
1 Loaf of Round Artisan Bread (Cut into 8 Slices)
½ cup Raspberry Jam
Mozzarella Cheese (8 Slices)
Canadian Bacon (8 Slices)
1 ½ cups Crystal Farms French Toast Batter
Preheat a grill or heat a greased nonstick skillet to medium heat. Spread 2 TB of jam on one slice of bread, top with 2 slices of mozzarella cheese and 2 slices Canadian bacon. Seal sandwich with other slice of bread. Pour Crystal Farms French Toast Batter into a shallow bowl and dip sandwich on each side. Place sandwich on the grill that has been sprayed with nonstick spray for 4-5 minutes until golden brown.
If using a nonstick skillet, grill sandwich 2 minutes on each side until golden brown. Repeat process to make additional sandwiches.
Serve with fresh raspberries, raspberry syrup and powdered sugar if desired.
Makes 4 Sandwiches
Pear & Scrambled Egg Breakfast Pizza
1- Thin Crust Pizza (11 ounce container)
2 cups- liquid Scrambled Eggs
8 ounces Whipped Cream Cheese
½ cup Sweet Orange Marmalade
1 Pear (thinly sliced)
Preheat oven to 400. Spread pizza crust into a cookie sheet and bake for 10 minutes. Pour liquid scrambled Eggs into a greased nonstick skillet over medium heat and stir gently until set. In a medium-sized bowl, mix cream cheese and orange marmalade. Spread marmalade mixture over pizza crust. Top with scrambled eggs and pear slices. Return to oven and bake an additional 10 minutes.
Drizzle with honey if desired.
Serves 8 (2 slices each)
