GOLDEN VALLEY, Minn. -- Paddle the Mighty Mississippi River with special guest Lucia Watson and sample fabulous picnic fare from Lucia's To Go.
Sip selected beverages in the setting sun. Float down the river in beautiful cedar strip Voyageur canoes built for comfort and ease. You'll see eagles, heron, turtles and with our guide Lark Weller of the National Park Service, who can address the ways our local sustainable farmers are helping to enhance the river's ecosystem.
Then reward yourself with a glorious feast and engage in fascinating conversations about delicious local food and the majestic Mississippi.
The trip will start with paddling and safety instruction provided by Wilderness Inquiry guides. There will be a trained guide in the stern (back) of each canoe to ensure safety and a fun trip for everyone.

Serves 4 to 6
Super good and super good for you, this salad lasts several days in the fridge. It's great on picnics because it will hold up for several hours.
1 large bunch kale (dinosaur kale is the best)
2 cloves garlic, smashed
1 to 2 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
2 to 3 tablespoons dried cranberries or cherries
2 to 3 tablespoons pumpkin or sunflower seeds
Salt and freshly ground black pepper to taste
Chop the kale (leaves and stems).
Turn into a large bowl and toss in the garlic. Using your hands, work in the oil until the leaves are nicely coated. Work in the vinegar. Then toss in the dried fruit, seeds and season to taste with salt and pepper. Allow to stand at least 10 minutes before serving.
