GOLDEN VALLEY, Minn. -- The Living Green Expo is going to ratchet up the fun with a bike rodeo, bike fashion show and more at the 11th annual Minnesota State Fairgrounds event, May 5-6, 2012.
The Living Green Expo, which attracts more than 20,000 people to the Minnesota State Fairgrounds each year, is one of the largest, most authentic events of its kind, with the distinction of being the largest zero-waste event in the state. With hundreds of exhibitors, workshops and activities, the 11th annual event is designed to provide individuals and families with insights on how living green can be easy, can save them money and enrich their lives.
Admission is free for anyone 18 and under, and $3 (online) or $5 (at the door) for adults over 18. Metro Transit provides free transportation to and from the Expo with the Go Greener Pass. Chinook Books will be given to the first 200 visitors each day.
The event runs from 9 a.m. to 6 p.m. on Saturday, May 5, and from 10 a.m. to 4 p.m. on Sunday, May 6.
Asparagus Puffs
1 Sheet Puff Pastry
1 Pound Asparagus
1/2 cup Dijon
2 Cups Fontina, shredded
To Taste Black Pepper
To Taste Salt
1. Preheat oven to 400°F.
2. Lay out pastry and cut in half lengthwise. Set one half aside. Brush with mustard and sprinkle liberally with cheese. Starting at one end, lay 2-3 asparagus end to end and roll pastry over, repeat two more times, maybe three, if room allows. Slice half inch circles and place on silicone lined baking pan. Refrigerate 10 minutes. Bake in upper portion of oven 8- 12 minutes. Cool to room temp so cheese sets. Serve.
