GOLDEN VALLEY, Minn--Minnesota's apple harvest is underway, about two weeks earlier than usual. Whether your favorite is a honeycrisp or haralson, there are plenty of ways to use them.
Our favorite foodie, cookbook author and food editor, Beth Dooley served up some of her favorites.
Fresh Apple Mint Salsa
Makes 1 cup
2 small tart, crisp apples, such as Keepsake or Regent
1/4 cup chopped fresh mint
1 small jalapeno pepper, seeded and deveined, finely minced
Sprinkling of sugar
Salt and freshly ground pepper, to taste
Toss all of the ingredients together in a bowl and serve right away.
Savory Apple Sauce!
Makes 2 cups
4 medium tart apples, Harlson or Cortland
1 tablespoon chopped sage
1 tablespoon chopped parsley
1/4 cup cider
Touch honey to taste
Peel, core and slice apples. Put into a medium saucepan set over medium heat. Cook until the slices are very soft and mash with the back of a fork. Stir in the herbs and honey to taste. Serve warm or at room temperature.
