GOLDEN VALLEY, Minn. -- The Greek Festival has a hot new menu item this year: Flaming Greek cheese!
Saganaki: Flaming Greek Cheese recipe:
- 3/4" Slice of Kasseri Cheese from a block
- All Purpose Flour for coating
- 1 Shot Metaxa (Brandy)
- 1/4 Lemon Wedge
- Pita wedges for serving with cheese.
Dip in water and then lightly flour the square cheese on both sides.
On a hot small skillet or cast iron skillet thinly coat with Crisco.
Cook cheese, flipping half way through until the center is transparent. You do not want to cook the cheese until it melts.
Remove from burner. Pour Metaxa over the cheese. Light the cheese with a lighter or the flame from the stove.
Three to five seconds later, put out the flame by squeezing the lemon wedge over the flame and cheese.
Serve hot cheese with the lemon wedge and pita wedges.
