Fun Fall Crafts for Families with Donna Erickson

GOLDEN VALLEY, Minn.  --  Donna Erickson, host of "Donna's Day" on TPTLife, stopped by the KARE Barn with her fun projects and craft ideas for families this fall.

Here are the projects Donna mentioned:

Summer Memory Story Blocks
1.  Decorate milk cartons with summer souvenirs, photos, etc.

2.  Toss on the floor to be a story starter for telling past summer adventures including fun at the State Fair.

Corny Stuff 

For kids with missing front teeth, here's how to quickly remove corn from cob:

1.  Soak corn on the cob in water and bbq husk and all
2.  Use a damp paper towel to remove silks

Corn Dip is a Snack-Attack Hit
by Donna Erickson

2 (15-ounce) cans Southwest Mexicorn with sweet peppers, drained
1 (4-ounce) can diced roasted green chilies, drained
1 (4-ounce) can diced jalapenos, drained
2 green onions (scallions), finely chopped
3/4 cup light mayonnaise
2/3 cup light sour cream
2 cups sharp cheddar cheese, shredded

Combine all ingredients in a large bowl. Chill, covered, for several hours or overnight to allow flavors to intensify.

Serve with corn chips in scoop shapes.  Or, use it as a dip for raw vegetables, or as a tasty filling with coarsely shredded carrots and sliced sugar snap peas in flour tortilla wraps.

Keeps well in the refrigerator (covered) for four to five days. Stir before serving. Yields 4 cups.
